The weather is starting to warm up, and we are craving fresh, spring vegetables!

You might want to give this a try…either on your grill outside or a stovetop grill pan indoors!

Inspired by Paleo Fresh, this recipe for grilled artichokes is an adaptation of the recipe found here:

Grilled Artichokes

4-5 whole artichokes, trimmed and halved
1 lemon, cut in half
1 tsp fresh minced garlic
1 tsp whole peppercorns
1-2 bay leaves
2 T olive oil
Salt to Taste

Directions

Prepare artichokes by trimming the stem to about 1 inch, and cutting off the top. Cut the tips from the larger leaves all the way around the artichoke; then cut the artichokes in half, length-wise. Juice the lemon, and set the juice aside in a small bowl. Then, cut the lemon into quarters.

Place artichoke halves in a large sauté pan, then fill with an inch or two of water. Place lemon quarters, minced garlic, bay leaves and peppercorns in the water and bring to a boil. Cover, and reduce heat to a simmer; cook for 15-20 minutes, or until tender.

Remove the artichokes from the water, and let drain and dry for about 5 minutes. Add the olive oil to the lemon juice, then brush the artichokes with the lemon juice and olive oil mixture. Sprinkle with salt, then grill for 3-5 minutes on each side until browned.

Remove the “choke” from the center of each half before serving. Enjoy!
